Homemade Vegan Ayurvedic Kitchari

A Recipe For Vata Season
| Grounding & Nourishing |

Step one:

    • rapeseed oil . 1 tbsp
    • mustard seeds . ½ tsp
    • cumin seeds . ¼ tsp

Step two:

    • turmeric powder . ¼ tsp
    • coriander powder ½ tsp
    • cinnamon ¼ tsp
    • black pepper . ¼ tsp
    • pink salt . ½ tsp

Step three:

    • red lentils . ¼ cup
    • brown basmati rice . ¼ cup
    • carrot {peeled & diced} . ½ cup
    • yellow onion {diced} . ½ cup
    • ginger {fresh, grated} . ¼ tbsp
    • spinach or kale {optional} . 1 cup

Step four:

    • coriander {fresh} . 1 tbsp
    • black sesame seeds 1 tbsp

Homemade Vegan Ayurvedic Kitchari

  1. In a large, deep non-stick pan heat the rapeseed oil. Add mustard and cumin seeds, swiftly followed by the fresh grated ginger, spices, salt and pepper.
  2. Sir until everything is well mixed, then add the lentils and rice, followed by the onion and carrot. Stir until everything is incorporated and then add water, stir, cover and simmer on a low to medium heat for 45 minutes, stirring half-way to avoid things sticking to the bottom of the pan. Ready when everything is soft/cooked and water has evaporated.
  3. Add spinach or kale if using. Taste.  Add more salt or pepper if required.

Ready to Serve 

4. Top with fresh coriander and black sesame seeds scattered on top. If you feel like being extra, you can add some roasted cauliflower and pomegranate seeds on top.

    • Tip: Make more of the same spice mix from the kitchari to roast the cauliflower.

Starting with taking a look at the way you eat. You can begin to incorporate more grounding, warm, nutrient dense foods that deeply nourish you by providing an abundance of healthy fats and proteins. Spices can be used to stimulate the nervous system, improve blood flow and create heat and moisture in the body.  Try to avoid eating foods which are cooling, bitter or raw.  Lean towards anything warm, naturally sweet, soothing and comforting.  Kitchari is a traditional dish from India made from brown rice, lentils or mung beans, veggies, and a mix of warming spices.  It is known for its healing and grounding properties.  It resets and gently cleanses the digestive system, making it great option for a simple detox with a recommended three day cleansing mono-fast.  It is incredibly easy to prepare, the ingredients are cheap to buy and you can be creative with the vegetables you include.  I like to keep it simple with just carrot, however, sometimes I’ll add spinach or kale to the pot too or get fancy and roast off some cauliflower to top it off with.
